Bazinga's ChocoBananaHoneyOat Muffins

My two-and-a-half-year-old is a picky eater, like many toddlers.  But she asks for "uffins," so I feed them to her.


1/2 cup brown sugar
2 eggs
1 banana
3/4 cup buttermilk
1/4 cup vegetable oil
1 tsp vanilla extract
3 tb honey
1 3/4 cups oats
1/2 cup chocolate chips
1 cup unbleached flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon



Directions:
1.  Preheat the oven to 375 degrees.  Line muffin pan with paper liners.
2.  In a large mixing bowl, whisk eggs and sugar until well combined.  Add banana and mash well.  Add buttermilk, oil, vanilla extract, and honey.  Whisk until all ingredients are combined.
3.  Whisk in the oats and chocolate chips.
4.  Sift the flour, baking soda, baking powder, cinnamon, and salt together.  Add the dry flour mixture to the batter.  Whisk until just combined.
5.  Divide the batter between the muffin pan cups.  Bake for 20 minutes.  Do a toothpick test to make sure they're done in the middle.
6.  Cool pan on a cooling rack for 20 minutes before taking the muffins out of the pan.
